Hibiscus Tea

In Love in Any Language, Emma and Jorge meet by providence in San Antonio when an unexpected storm drives them into a tea room. There they enjoy tea of course, and finger sandwiches, pastries, and Pico de Gallo to boot. Hey, it is San Antonio after all.

Ingredients
  

  • 8 ea hibiscus flowers
  • 3 cups water
  • 1 TBS fresh lime juice
  • honey to taste local, raw honey is best

Instructions
 

  • This is a recipe for two cups. You need about 4 flowers per cup of tea.
  • Remove the calyx (the green part) from the flower which is attached to the plant. Remove the stamen (the part where the yellow seeds are attached.) Wash the petals under clean running water. Place in glass bowl or quart jar.
  • Bring water to a boil. Pour over the petals. Cover and steep for 10-12 minutes.
  • Strain the tea. Add lime juice. Add honey to taste and serve.
